First published as Fast, Fresh and Fabulous when GI (glycaemic index) was still a term only used by nutritionists, this book has been updated with a more detailed explanation about GI foods and their relationship to a healthy diet.
This book is written by the popular vegetarian cookery writer Rose Elliot. She became interested in the theory that following a low GI diet would enable her to eat healthy 'normal' foods, keep slim and dispense with the need to count calories.
Although the theme of 'slimming' and 'weight loss' run through out the book it is not a dieting manual. It is more than that. In her introductory chapter, Rose explains that following a GI diet equates to following a healthy diet. By removing the highs and lows of refined sugar intake, the boy will maintain a stable body weight naturally. As well as covering the GI index and its benefits, she expands on getting and staying slim, following this diet if you are pregnant, feeding the family on a GI diet and using the diet to have a healthy lifestyle. It is an easy to read and informative section.
There follows a good range of recipes, around 150 in all, none of which is too challenging and so can be used for everyday meals. As this book is based on Fast, Fresh and Fabulous most of the recipes are quick to prepare, easy to follow and are suitable for cooks at all levels. Each has a short introduction and there are a few tips scattered throughout the book. There is also a generous number of photographs - something I appreciate when trying a recipe for the first time.
Overall, the book is nicely presented, easy to read and has a range of interesting recipes that can be added to any diet where it is following the GI plan - or not.
